The reason why there's so many horror films about these kinds of occasions is because a long time ago, when "Halloween" and "Friday the 13th" first came out, they were such mega hits and so popular that a lot of other later movies took inspiration from them. There's also pretty smart to make a film with a plot that takes place one day of the year. That makes the movie easy to remember for the audience and they'll keep it in mind at that day for a long time. Probably a lot of people watch the movie just because of its theme too.
